  In 2002, I decided to I wanted work in the pub industry. I had worked in a fast food restaurant a couple of years back and wanted to learn the pub trade. I have a thing about Irish pubs. Its part of our culture and tradition and I knew it could be my ticket around the world. I did a three month course in what was called Cert at the time. It was newly kitted out with a working bar. As part of the course, I got paid and also worked part time in the Temple Theatre beside the Children's hospital in Dublin. The people on the course were from different backgrounds and we got on well. I learnt about spirits, service, cocktails, how to make soup and sandwiches and how to pour a pint. Of course, it didn't prepare me fully for working in the industry (only working in a bar can you learn to be anyway good with it) but was a good basis. What I liked about the course was how the different groups who were on the course worked together. Those on the catering and hotel service course made the lunch for those on the bar course. We would prepare the bar for different functions coming through. It was a collaborative effort. I found the instructor be be very good and helpful. We kept a portfolio of our time there. One thing though was that they had promised to send me out a certificate on completion of the course. I followed up a couple of times but am still waiting on it!
